Ingredients:

  • 1 cup red lentils
  • 2 carrots, grated
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 chopped tomato
  • 1 cup fresh spinach
  • 4 cups vegetable broth
  • Salt and pepper to taste
  • A pinch of red pepper flakes for added spice (optional)

Instructions:

  1. Sauté Vegetables: In a pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, cooking until softened.
  2. Add Carrots and Tomatoes: Incorporate the grated carrots and chopped tomato. Cook for about 5 minutes until tender.
  3. Combine Lentils and Broth: Stir in the red lentils and vegetable broth. Bring to a boil, then reduce heat and simmer for 20-25 minutes until lentils are cooked.
